It is so fun to try coffees processed in new and interesting ways like this “lactic anaerobic fermentation”. Super ripe coffee cherries with optimal sugar content (which feeds the fermentation process) are fermented in a water free and oxygen free environment where the sugars are transformed into lactic acid, leading to intense aromas, sweetness and creaminess with unique flavors. Add the fact that Tarrazu is the most famous coffee producing region in Costa Rica and we’re looking at something really interesting.
In the cup there is a wonderfully complex and balanced flavor experience. Expect fruity hibiscus, sweetened velvety strawberry cream, tropical fruits, a caramel undertone with a hint of almond. It has a luxurious pillowy mouthfeel but still maintains a bright, fruity, floral character, with a lingering sweetness to the finish.
