Honduras - Organic SHG {Washed}

This organic washed process coffee comes from a farm located at high altitudes of the Pico Congolun mountain range, set between two biological reserves: Reserva Biological de Opalaca and Reserva Biological Volcan Pacavita. The combination of microclimate, rich clay soil, and warm sunlight makes for a lovely result in the coffee. 

The beans have a classic coffee smell that gives off toffee hints and reminds me slightly of the sweet smell of a fresh bakery.  The taste is big on milk chocolate, and there are hints of roasted almonds, brown sugar and some praline. The mouthfeel is delicate and lively. There is a brisk and well integrated acidity. The finish is gently cocoa driven, with a long and sweet finish, and a tiny bit of marzipan on the back end.  This one is easy to drink anytime in a variety of ways.
