This is an exceptional pink bourbon varietal coffee from the Huila region in Colombia. Pink bourbon beans are highly sought after and comparatively rare. The seeds mature into a distinct pink or peach hue, rather than the standard red or yellow, and because the varietal shares genetic ties with the legendary Geisha varietals, it produces a cup with incredible clarity, acidity and a creamy sweetness.
In the cup! The initial aroma is chocolate and toffee caramel, with a little floral note, but the taste is bright, clean and endlessly layered. It is silky sweet with chocolate, green grape and brown sugar at the base, yet there is still a decent citrus vibrancy that could be described with blood orange and pink lemonade. This creates a nice tingle up front, followed by a juicy and sweet nougat finish, and then a little floral and citrus at the very end. It has a lovely viscosity and full body that complements things so well. The overall profile and layered complexity of this coffee really does invite the drinker to slow down and pay attention as the cup cools. Love it!
