Every so often we like to offer exotic coffee types that have flavor profiles not available in the grocery store, or even many coffee shops. We have a limited quantity of this glorious ‘anaerobic process’ coffee, sourced from an innovative microlot in Colombia.
This coffee is intensely fruity, rich and complex, which becomes immediately apparent in the initial wet aroma, like a strawberry banana milkshake. You’ll appreciate the difference and quality on the first sip but this one really shines when it cools a bit. We are talking tropical fruits, guava and hint of banana up front, with strawberry and watermelon sweetness, followed by a lovely dark chocolate finish and mild tangerine acidity. Rich and creamy body throughout. Every sip of this one feels like a real treat.
The anaerobic natural process means the whole fruit is fermented in an oxygen-free environment before drying (in this case, for 50-60 hours). Anaerobics are becoming a common processing step for progressive producers for its ability to create an environment that allows the fruit pulp to break down and sugars to be released around the coffee seed, without the danger of oxidation or mould, and without beginning to dry. This process adds a deep creaminess and intensity to the balance of flavors.
