It’s surprising that this is the first time we are selling a honey processed coffee. Despite the name it has nothing to do with honey. Its a process that started in Costa Rica and has since spread to other regions. In this process some of the sticky sweet mucilage of the coffee cherry (or honey) is left on during the drying stage, allowing the natural sugars to enhance the coffees sweetness. giving the coffee a flavor that moves closer to a natural.
This coffee was grown in the renowned Tarrazu region of Costa Rica, which is known for producing some of the worlds finest arabica beans. High altitude, rich volcanic soil and unique microclimate are factors that contribute to this.
The taste! The smell is classically sweet and milk chocolatey. This follows through into the initial sip but there is a dark chocolate toffee and caramelized almond that follows through, with a honey sweetness, and a little stone fruit, and even some red apple notes in the finish. It is lively, velvety, sweet, soft and clean, with medium body and medium acidity for the mouthfeel.
