This is a gorgeous organic, Grade 1, naturally processed coffee from Hamasho, located in Ethiopia’s Sidama zone, at elevations 2100 meters above sea level. Thanks to the region’s fertile red clay soils, ample rainfall and high altitude, Hamasho coffees are renowned for their complexity and refinement. With natural processing, the ripe, sorted cherries are dried in the sun with the skin, pulp and mucilage intact. This process takes several weeks and imparts intense flavors into the bean. By meticulously avoiding over fermentation during the drying process the producers craft elegant and distinctive cup profiles that are sweet, fruit forward and complex.
The taste! As soon as you open this coffee a sweet aromatic berry aroma will rise out of the bag to greet you. In the cup I got strawberry, watermelon and honey, on a sweet chocolate caramel base. As it cools there is a high chew candy-like sweetness that develops, with a hint of star fruit and orange on the back end. It has a smooth, sweet and balanced mouthfeel, with medium body and medium acidity. A real treat, anytime!
