This is the first time we are offering a ‘supernatural’ processed coffee, and it does not disappoint! Arriving from the Chelchele area, part of the Gedeb district, where some of Ethiopia’s most complex and aromatic naturals come from year after year, this Grade 1 ‘supernatural’ microlot goes beyond the typical natural process. Hand-sorted cherries are sealed in carbon fiber drums for 10 days of temperature controlled anaerobic (deprived of fresh oxygen) fermentation. This allows the sugars in the fruit to develop far beyond what they would in a normal natural process coffee, without over fermenting. The result? A syrupy, vibrant cup, with striking complexity!
The taste: firstly, the beans smell deliciously sweet and fruity. The hot cup, exudes an aroma of sweet strawberry jam that continues into the first sip, along with apricot-like stone fruit, hibiscus, baking spice, and heavy cream with a little tangy raspberry. All underpinned by a body of milky chocolate. This fruity and vibrant cup shines as it cools. It has a creamy and silky, yet clean finish that lingers beautifully. It is juicy, complex, bold, adventurous and bright. A real treat, and a ‘first’ if you’ve never tried a supernatural process before. Best enjoyed as pour over, French press, filter.
